Starters

Maple roasted butternut squash, whipped goat’s cheese, pickled squash and caramelised walnuts

Flamed and cured mackerel with horseradish emulsion, beetroot and crispy chicken skin

Local wood pigeon with heritage carrot, feta cheese and hazelnuts (may contain shot)

Loin of lamb with hay-smoked celeriac

Hand-dived Scallop, cauliflower, autumn truffle and sea herbs

Crispy pig’s head terrine with parsnip, Granny Smith, black olive and quail’s egg

Mains

Pan roasted gnocchi with a wild mushroom, blush tomato and truffle ragu

Grilled fillet of line-caught wild sea bass with charred broccoli, braised celeriac, Trompettes and sea herbs

Roasted breast of duck, braised leg ragu, charred sweet corn, mushroom and leeks

Local Venison, turnips, smoked potato cottage pie and sorrel

Slow cooked chicken, butternut squash, truffle and charred hispi

Tenderloin of Wiltshire pork with mustard, glazed carrot, pickled cabbage and braised pig cheek beignet

Fillet of beef, TSD chips and béarnaise sauce

Banana custard with banana “granola” and banana ice cream

Buttermilk panna cotta with marinated blackberries, mulled wine jelly, blackberry sorbet and liquorice meringue
